Txakoli Irribarrak Pearl
We are a small winery located in Alto Garate, in Llodio. It was born in 2007 as a result of the deep-rooted tradition of the baserri Garate for the elaboration of txakoli. We grow four grape varieties: Hondarribi Zuri, Petit Courbu, Riesling and Hondarribi Beltza, from which two txakolis are made: txakoli Garate blanco. In addition, we make txakoli fermented in French barrels, txakoli vermouth and Riesling monovarietal.
IRRIBARRAK ̈La Joven de la Perla ̈ is made with grapes from plot 1038 of the Riesling and Hondarrabi Zuri varieties. Early variety that is the first to be harvested. It is harvested in 8 kg boxes that are quickly transported to the winery for destemming, maceration and low pressure pressing. Fermentation in stainless steel tanks is extended for 15 days until the sugars are finished and it is dry. Once fermented, it remains in contact with its fine lees for 5 months, which will provide richness and smoothness. After that time, it is allowed to clarify, filtered and bottled.
The Txakoli Irribarrak Perla is a very expressive txakoli. Bright straw yellow. High intensity on the nose with floral and green fruit notes. Fresh, unctuous on the palate, with a long journey and pleasant acidity.
